Mini Chocolate Protein Cupcakes

44 Calories, 1 Gram of Fat, 7 Grams of Protein, 1 Gram of Carbs
Makes 24 Servings

Cupcake Batter
– 1 large banana
– 3 scoops vanilla protein
– 2 tablespoons cocoa powder
– 1 teaspoon vanilla
– 1 tablespoon xylitol  ( sweetener of choice )
– 1/4 almond flour
– 1 egg
– 3/4 cup of greek yogurt
– Chocolate chips if desired… just do it!

Protein Icing
– 1 1/2 scoop vanilla protein powder
– 1 1/4 cup of greek yogurt

Instructions

1 ) Preheat oven to 350f
2 )Put all batter ingredients into food processor/blender & blend until smooth . Once done add in those chocolate chips !
3 ) Line a mini cupcake pan with papers & drop a tablespoon of batter in each . Bake at 350 for 12 minutes
4 ) In a mixing bowl add greek yogurt & protein powder & mix until completely smooth ( add sweetener to taste )
5 ) Put icing in a zip lock bag & cut a corner off & ice the cupcakes!

Be sure to keep leftovers in the fridge!
